A Ridiculously Good Cookie...

My mother-in-law, Carolina, has had this recipe all her life, and was passed to her by "Nonna", her mother.  These are ridiculously good cookies.. If you're on a diet, move on to the next hub :). But, if you want a great treat, and don't mind working from a recipe, your family and friends will love these! A great tradition cookie at Christmas time..

The Magic Ingredients

Here's what you'll need to get started:

  • 1 1/2 cups sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 1/4 cups flour
  • 1 cup butter
  • 1 tablespoon water
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts

How to Prepare

In a large bowl (mixing as you go along), add butter (soften in microwave or pan) and sugar. Add eggs, 1 at a time, then water and vanilla. Add salt, baking powder and flour. Then add the walnuts. Mix until it's thick enough to roll into a log/s.  Slice into desired thickness.  Cook at 350 degrees for about 10 minutes. And, voila, you have ridiculously good cookies!  A great benefit with this recipe is if you want to have these ready for any time, you can freeze the cookie dough logs wrapped in wax paper. Just defrost for a couple of minutes in the microwave, and follow the same directions above.  Enjoy..
